Tea is the standard water-based preparation of taking herbs for their full range of vitamins, minerals, and nutrients. It's best to pour hot/boiling water over a tablespoon (for a cup) of dried leaf/root/bark and let it steep covered for 10 to 20 minutes. Honey, lemon, and/or milk are wonderful additions for taste and medicinal benefits.
Infusions are the most medicinally potent water-based herbal preparation. They contain more herbal matter and are steeped much longer (usually over night). An infusion is made by pouring boiling water over the herbs, covered and steeped over night. It's much thicker and darker than tea.
Culinary herbs such as rosemary, sage, holy basil, thyme, peppermint, and spearmint are great for flavoring food and drinks with wonderful health benefits.
